Blackberry Roasted Chicken


Blackberry Chicken
With words Wordless Wednesday

Ingredients

2 cups blackberries, washes & drained
2 chicken breast
1 lemon, sliced
4 sprigs fresh rosemary
garlic salt


Directions

Preheat oven to 350. Rinse and dry chicken. (I buy skinless chicken breast, so instead of putting the ingredients under the skin like the recipe called for, I just cut a canal down the center.) Place 2 rosemary sprigs, 1/4 blackberries, and 1/4 of lemon slices in center (I didn't really measure). Sprinkle with garlic salt.

Roast at 350 for about 45 minutes, until golden brown.


After a post I did requesting ideas on what to do with the blackberries from our yard, I found this recipe. I was very interested in trying it since it wasn't what you would normally suggest - usually a dessert related item comes to mind. I highly recommend trying this out if you still have access to blackberries this late in the season. It was quick, easy, and delicious!

*Valentine's Dinner was fabulous.......I loved everything we had......For my entrée I had the Ostrich because I really wanted to try something I had never ate before so I took it all the way and went for the Ostrich....It was very good......tastes similar to lean beef.......and is a darker meat.....according to what I've heard it's also lower in calories.........but high in protein........I wouldn't hesitate to eat it again, as it was delicious! The appetizer was a mix of our favorite cheeses, so we couldn't go wrong there.....The dessert was pretty good, I didn't think I could handle a piece of cake so I went for something a little lighter.......everything was great.......the setting, the food, the night........

Tex Mex Chicken

This stuff was great............and I highly recommend you try it out if your stomach can handle salsa. If it can't.............yikes - I hate that for you!
Mine surely didn't look the same as the photo below but when does it ever plus it must be piled with cheese if it's to be served in this house!?!?! I had this stuff for about 4 meals in a row, even with the copious amounts of leftovers consumed........I would still make it again sometime soon, it was really easy and cheap!! Cheap, cheap, cheap...........That's me!!
